For all other hymn samples, Garritan sounds are used… vocal ooo’s for the SATB, flute for the counter-melodies and piano for the alternate piano parts.
These samples give ideas only. There are so many different ways you can use Congregation Choir arrangements, with flute and/or vocal counter-melodies on some or all verses, and alternate piano alone or with the organ SATB on some or all verses. It depends so much on the situation and the people you have to work with… and your own creativity!
